Black Bean Burritos

Black Bean Burritos – a vegetarian favorite. It's high in fiber so you don't have to feel guilty.

Ingredients
  

  • 2 cl. garlic
  • 1 can black beans
  • 1 cup corn
  • olive oil
  • 1 large onion
  • 1-1/2 tsp. chili powder
  • 1 tsp. cumin
  • 1 14.5 oz can diced tomatoes drained
  • small jar of salsa
  • black pepper
  • 6 floor tortillas
  • 1/2 cup Monterey jack cheese

Instructions
 

Do this first

  • Mix drained diced tomato and salsa (set aside)
  • Puree 1/2 can of black beans (set aside)
  • Wrap corn tortillas in aluminum foil and heat in oven to soften

Let's start cooking

  • Saute onion and garlic in oil. 3 minutes.
  • Add chili powder and cumin and continue to sauté. 1 minute.
  • Add 1/2 of the tomato mixture and all of the corn to frying pan and simmer for 1 minute.
  • Add pureed beans and whole beans to pan and heat until the beans are warm and have thickened.

Build your Burritos

  • Divide the contents of the pan among the 6 tortillas and wrap.
  • Place the wrapped tortillas on a greased oven proof dish.
  • Top with remaining tomato mixture and cheese. Cover with aluminum foil and bake until cheese melts. About 15-20 minutes.
  • Makes 6 Enchilades. Serve with rice.
