Tabouli Salad (Tabbouleh Salad)

A fresh tasting salad you can serve with a veggie burger or a sandwich.

- 1 cup quinoa cooked
- 1 small onion diced
- 1/2 bunch chopped parsley
- 2 firm tomatoes diced
- 1 cucumber diced
- 5 tbl. Olive oil
- 1/4 cup lemon juice or to taste
- salt and pepper to taste
Cook the bulgur wheat, then cool. Toss with onion, tomatoes, parsley, cucumber, lemon juice and olive oil. Toss well. Cover and leave in the refrigerator for a few hours or overnight.
Makes a good side dish for Veggie burgers or pair it up with Hummus and some pita bread for a great snack.
