Broccoli Bean Cheese Soup

And easy, hearty soup with no cream but creamy just the same. I make it with Veggie Cheese to make it vegan.

Ingredients
  

  • 1.5 cups of Vegetable broth
  • 1 head of Broccoli
  • 1 15 oz can of Chick Peas rinsed
  • 4 oz of Veggie Cheddar Cheese
  • 1/2 tsp of Ginger
  • 1/2 tsp of Nutmeg

Instructions
 

  • Add the broth, broccoli and rinsed chick peas to a stock pot and cook for 8 minutes until the broccoli is tender but not overcooked. It should still have a nice bright green color.
  • Transfer half of the mixture to a food processor or blender and pureĆ©. Then add the rest and continue to pureĆ©. Add the Veggie Cheese, ginger and nutmeg and mix again. The heat from the hot broth should help blend the cheese with the soup.
  • Serve.
