Broccoli Bean Cheese Soup

And easy, hearty soup with no cream but creamy just the same. I make it with Veggie Cheese to make it vegan.

- 1.5 cups of Vegetable broth
- 1 head of Broccoli
- 1 15 oz can of Chick Peas rinsed
- 4 oz of Veggie Cheddar Cheese
- 1/2 tsp of Ginger
- 1/2 tsp of Nutmeg
Add the broth, broccoli and rinsed chick peas to a stock pot and cook for 8 minutes until the broccoli is tender but not overcooked. It should still have a nice bright green color.
Transfer half of the mixture to a food processor or blender and pureƩ. Then add the rest and continue to pureƩ. Add the Veggie Cheese, ginger and nutmeg and mix again. The heat from the hot broth should help blend the cheese with the soup.
Serve.
