Cook Farro in 3 cups of boiling water for 20 minutes or until tender.
In a separate pot, saute onion in oil 2 minutes then add the garam masala and saute 1 more minute. Reduce the heat to medium/low. Add the cooked and drained Farro to the onions then add: raisins, sunflower seeds, and spinach, stir, cover pot and leave on the heat for 5 minutes.
