Penne Alla Vodka

Ingredients
  

  • 2 tbls Butter
  • 1 tsp Hot Pepper Flakes
  • 2/3 cup of vodka you can use the cheap stuff
  • 16 oz Can of Plum Tomatoes puree with an Immersion Blender or Food Processor
  • 3/4 cup of Heavy Cream or Evaporated Skim Milk
  • 1/2 tsp Salt
  • 3/4 cup of Romano Cheese
  • 1 lb of Whole Wheat Penne Pasta

Instructions
 

  • Add the butter, hot pepper flakes and vodka to a sauce pan and simmer for 2 minutes.
  • Than add the pureed tomatoes, heavy cream and salt. Simmer an additional 5 minutes.
  • In a bowl mix the Romano cheese with the sauce until it's incorporated and then pour over whole wheat penne pasta.
  • Optional: You can toss in cooked frozen peas at the last minute. It adds some nice color.
