A wonderful one pan dish that is easy to prepare and your family will love.
Vegetarian Paella
Great for parties or for a side dish.
Ingredients
- 2 cups Vegetable stock
- 1 cup Rice I use Basmati
- 1 tbl. Olive Oil
- 1 sm Onion chopped
- Saffron
- Minced garlic 1 clove
- Paprika
- Oregano
- 1/2 head of Broccoli flowers
- 6 Brussel Sprouts
- 1/2 cup frozen Corn
- 1/2 cup frozen Peas
- 1/2 Red Bell Pepper diced
Instructions
- Saute onion, red bell pepper and garlic in oil until tender then add the rice and stir. Be careful not to burn the rice.
- Add the broth slowly then the seasonings and stir.
- Now add the vegetables.
- Cover and simmer on Medium for 20 minutes or until water is absorbed.
