Tabouli Salad (Tabbouleh Salad)

Ingredients
  

  • 1 cup Quinoa cooked
  • 1 small onion diced
  • 1/2 bunch chopped parsley
  • 15 cherry tomatoes
  • 1 small cucumber diced
  • 2 tsp. Olive oil
  • 1/8 cup lemon juice or to taste
  • salt and pepper to taste

Instructions
 

  • Cook the bulgur wheat, then cool. Toss with onion, tomatoes, parsley, cucumber, lemon juice and olive oil. Toss well. Cover and leave in the refrigerator for a few hours or overnight.
