This is one of my favorites for special occasions. Great to take to a friends party. No one will miss the meat.

Spinach Lasagna

The best vegetarian lasagna you will ever have and you made it.

Ingredients
  

  • 2-1/2 pound Part Skim Ricotta Cheese
  • 5 Eggs
  • 16 ounce Mozzarella Cheese Shredded
  • 1 bunch Parsley Chopped
  • 2 packages Chopped Frozen Spinach
  • 2 cups Marinara Sauce

Instructions
 

Preheat your oven to 350°

  • Boil lasagna noodles until cooked but firm. Rinse and put aside keeping them in cold water.

Cheese filling:

  • Mix Ricotta Cheese, 2 eggs and 6oz. of the Mozzarella Cheese

Cook the Spinach:

  • then drain out all the water. Seriously, all the water

Spinach filling:

  • Mix 3 eggs with cooked spinach and 6ox of the Mozzarella Cheese

Assemble:

  • Add a thin layer of Marinara Sauce to the bottom of your lasagna pan
  • Then place the first layer of noodles.
  • Pour the spinach filling over the noodles then place another layer of noodles.
  • Carefully spread the cheese mixture over the noodles. Making sure the noodles stay put.
  • Now add the last layer of noodles.
  • Pour sauce over the top of noodles and cover with aluminum foil. Bake at 350° for 30 minutes. Then take off the foil and top with Mozzarella Cheese (about 4oz). Not too much. This isn’t a pizza. 🙂
  • Place back in the over until Cheese is melted. Approximately 8 minutes.
