I call this a stew instead of soup because it’s thick. An excellent source of protein and fiber.
Lentil Stew
A good, hearty stew that is very healthy for vegetarians. You will never have to worry about Protein if you add lentils to your diet.
Ingredients
- 1 tablespoon Olive Oil
- 1 clove Garlic Chopped
- 1/2 Onion Chopped
- 2 cups Vegetable Stock I like Pacific Foods
- 1 cup Lentils Dry
- 2 Carrots Sliced
- 2 stalks Celery Sliced
- Handful of Fresh Spinach Substitute: Escarole or Kale
- To taste
- 1/4 cup Parsley Chopped
- 1 can Diced Tomatoes 14.5 oz. can
- 1/2 package Frozen Mixed Vegetables
Instructions
- In a stock pot sauté onions and garlic in Olive oil until onions are transparent.
- Then add the vegetable stock, lentils, carrots, celery, spinach, diced tomatoes, herbs and spices.
- Cook on medium for 35 minutes. Add more stock if it’s getting too thick.
- Add frozen mixed vegetables and cook 10 more minutes.
Serves 8
