Zucchini Patties
Ingredients
- 2 cups of shredded zucchini Squeeze the zucchini in a clean towel to remove the excess moisture.
- 2 eggs beaten
- 1 clove of Garlic finely chopped or minced
- 1/2 cup onion finely chopped
- 1/2 red bell pepper finely chopped
- 1/2 cup all-purpose flour
- 1/2 cup grated Romano Cheese
- 1/2 cup shredded Mozzarella Cheese
- Liberal grinding of black pepper
- Olive Oil for frying Cover the pan with your oil, but not too much.
Instructions
- In a bowl combine zucchini, eggs, onion, red bell pepper, Romano cheese and Mozzarella cheese. Add the flour a little at a time and stir. Make sure all ingredients are evenly distributed.
- Heat oil in a fry pan at Medium-high. Use a 1/4 cup to measute and drop into the pan. Flatted the pattie mixture a bit. You can make 3 to 4 at a time. Cook each side about 4 minutes until golden brown. You want to make sure it is cooked in the middle.
