Vegetarian Paella

Ingredients
  

  • 2 cups Vegetable stock
  • 1 cup Rice I use Basmati
  • 1 tbl. Olive Oil
  • 1 sm Onion chopped
  • Saffron
  • Minced garlic 1 clove
  • Paprika
  • Oregano
  • 1/2 head of Broccoli flowers
  • 6 Brussel Sprouts
  • 1/2 cup frozen Corn
  • 1/2 cup frozen Peas
  • 1/2 Red Bell Pepper diced

Instructions
 

  • Saute onion, red bell pepper and garlic in oil until tender then add the rice and stir. Be careful not to burn the rice.
  • Add the broth slowly then the seasonings and stir.
  • Now add the vegetables.
  • Cover and simmer on Medium for 20 minutes or until water is absorbed.
