Tabouli Salad (Tabbouleh Salad)
A fresh tasting salad you can serve with a veggie burger or a sandwich.
Ingredients
- 1 cup Quinoa cooked
- 1 small onion diced
- 1/2 bunch chopped parsley
- 15 cherry tomatoes
- 1 small cucumber diced
- 2 tsp. Olive oil
- 1/8 cup lemon juice or to taste
- salt and pepper to taste
Instructions
- Cook the bulgur wheat, then cool. Toss with onion, tomatoes, parsley, cucumber, lemon juice and olive oil. Toss well. Cover and leave in the refrigerator for a few hours or overnight.
