Black Bean Burritos
Black Bean Burritos – a vegetarian favorite. It's high in fiber so you don't have to feel guilty.
Ingredients
- 2 cl. garlic
- 1 can black beans
- 1 cup corn
- olive oil
- 1 large onion
- 1-1/2 tsp. chili powder
- 1 tsp. cumin
- 1 14.5 oz can diced tomatoes drained
- small jar of salsa
- black pepper
- 6 floor tortillas
- 1/2 cup Monterey jack cheese
Instructions
Do this first
- Mix drained diced tomato and salsa (set aside)
- Puree 1/2 can of black beans (set aside)
- Wrap corn tortillas in aluminum foil and heat in oven to soften
Let's start cooking
- Saute onion and garlic in oil. 3 minutes.
- Add chili powder and cumin and continue to sauté. 1 minute.
- Add 1/2 of the tomato mixture and all of the corn to frying pan and simmer for 1 minute.
- Add pureed beans and whole beans to pan and heat until the beans are warm and have thickened.
Build your Burritos
- Divide the contents of the pan among the 6 tortillas and wrap.
- Place the wrapped tortillas on a greased oven proof dish.
- Top with remaining tomato mixture and cheese. Cover with aluminum foil and bake until cheese melts. About 15-20 minutes.
- Makes 6 Enchilades. Serve with rice.
